6th attempt, using the recipe at http://www.matomsorg.no/id/506.0 seems to yield fairly stable well-behaved loaves. Still experimenting with proofing "baskets", temperatures, and whether or not to bake in parchment paper. This time the dough had a wonderful stringy, almost rubbery, texture.
